Kawakawa leaves are well known for their healing properties and distinctive warm peppery taste. They are great for cooking or used in tea for internal medicine. With spring around the corner, here’s an amazing way to use them differently.

Kawakawa syrup is easy to make, a vibrant, herb-infused elixir that captures the plant's unique character in a versatile way that can elevate everything - from your morning pancakes to evening cocktails.

Ingredients

15 Kawakawa leaves (preferably with intricate insect holes)
1 small ginger root
2 cups of sugar
2 cups of spring water

Method

1. Combine the water and sugar in a pan over medium heat and bring to a simmer. Stir until the sugar dissolves and reduce the heat to low.
2. Add 15 Kawakawa leaves and the sliced ginger root, and stir gently. Simmer for 20 minutes.
3. Set aside and let cool completely before straining the liquid.
4. Pour the syrup into a clean, sterilised bottle and keep it in the fridge. For a longer shelf life, you can add a splash of lemon juice.

 

Enjoy it with still or sparkling water, or add to desserts for a fresh herbal flavour.
