Fig leaves syrup

Here’s an easy recipe for a fig leaves syrup, which could be used for sodas, cocktails, or drizzled over desserts. The syrup has an amazing taste of figs!
Ingredients:
15 fig leaves
2 litres water
4 cups white or brown sugar
Juice of 4 lemons
Fresh mint / lemon balm / pineapple sage leaves for garnishing
Instructions:
- Clean the fig leaves well. Bring the water to a boil, add the leaves and lemon juice, cover, and simmer for 45–60 minutes.
- Remove the leaves. You should have around 5 cups (1.25 L) of liquid left due to evaporation.
- Add sugar and simmer for 15 minutes.
- Store in the fridge, or use the water bath canning method to preserve it in jars.
Caution: if you're allergic to latex, it's best to avoid figs and fig leaves altogether.
